Today is leftover day.
Mixed the leftover shrimp dish, which my cousin made days ago, with brown rice, spinach, and egg white to create my own version of yang chow. That’s for my mom. And I finished yesterday’s soup and the other day’s sotanghon (courtesy of Goldilocks). To make our meal interesting, I mixed greens with strawberries, guacamole, and cherry tomatoes with cranberry, walnut, and gorgonzola dressing. Topped our lunch off with dark chocolates.
